1/2 cucumber, peeled and chopped
8 cherry tomatoes, halved
2 ounces of leftover chicken breast (grilled or cooked plain), shredded
2 teaspoons of diced red onion
1 teaspoon of dried oregano
4 kalamata olives
4 or 5 small basil leaves
Salt and pepper to taste
A small amount of high quality olive oil
Combine all ingredients except oil and toss together in your favorite dish. No need to dirty a pan on this one. Drizzle olive oil over the top and enjoy 🙂 Fresh picked from the garden is a plus for this dish!
