Good morning, rise and shine! It’s day 8! This oatmeal recipe works for Monday and Tuesday with rice milk and fruit of choice. For Friday and Saturday, you can use nut milks as well but only berries for the fruit. Sunday, you get it all.
1 3/4 Cups Water
1 Cup organic steel cut or traditional oats*
Dash of salt
1 scoop of Stevia (optional)
1 egg white (optional)
1/2 teaspoon of cinnamon
1 cup fresh fruit (excluding grapes and bananas)
1/4 Cup optional Rice Milk (no other milk alternatives for M & T)
1. For creamy, add oatmeal to water and bring to boil. For more chewy oatmeal, bring water to boil and then add oatmeal to boiling water.
2. Reduce heat to slow boil and cook per instructions specific to your oatmeal product. Add salt in early cooking stage (optional).
3. When oatmeal is a minute or two from being done, rapidly stir egg white into hot oatmeal and stir rapidly for one minute, or until cooked egg whites are cooked and blended.
4. Serve with your favorite fruit! If you want the fruit cooked, cut it small and add it with the egg white for the final 2 minutes.
