Simple fish tacos on cabbage shells (delish!)

Standing at my fridge today, I surveyed the options like I would a chess board preparing for my next move. I’d not had fish tacos in ages due to the fried or gluteny (is that a word?) shells and the dressing that usually contains dairy. But there it was, all coming together. As the pieces fell together, a new taco was born. This is a perfect meal for our Jump Start Challenge on good fat days, Friday through Sunday!

Leftover grilled white fish (or just pan fry a piece of rockfish seasoned in garlic and onion powder)

Shredded cabbage, red peppers and carrots, seasoned with a wedge of fresh lime juice, salt and pepper

1 slice of avocado, halved

Fresh Tartar sauce

2 outer leaves of green cabbage

Fill cabbage shells with shredded vegetables and top with avocado and sauce! Simple and delicious!
